Under the direction of the Director, Food & Beverage, the Manager of Compliance and Training for Food & Beverage is responsible for coordinating all internal and external audit reviews and the training programs associated with Food and Beverage Operations.
This position is critical to managing the compliance procedures, training of service standards of the Food and Beverage programs, products, and services.
The Manager of Compliance and Training is the subject matter expert on all matters of policy, procedures and service standards to ensure they integrate with departments such as Gaming Commission, Casino Compliance, Operational Compliance and Human Resources,
Essential Duties & Responsibilities
1.
Ensures work performed by Food and Beverage team members meets regulatory requirements, industry standards, practices set by leadership relative to evaluating program quality and effectiveness, as well as identifying areas for improvement and forecasting future program needs.
Monitoring changes in policies, law or regulations that require updates to policies and procedures.
Responsible for planning, measuring, and analyzing data, monitoring trends, and evaluating process and service quality and discovered service quality gaps.

Leads all Guest Service Training to F&B team members.
creates and implements formalized training curriculum to align with the Food & Beverage Strategic Objectives.
Focused on facilitation of learning via classes, job aides.
Maintains an ongoing development of general training instructions, checklists, and Job Aides.
Maintains and updates individual and departmental training records and files.
Maintains individual and departmental electronic training records and files as it relates to training attendance.
Maintains all F&B Team Member Certification notifications and renewal dates, ensuring that both are kept current for all Food & Beverage team members.

Managers and/or Executes all training for the department.
Ensures policy and procedure compliance with continuous training for all Food & Beverage Department team members.
Manages the new team member orientation experience for the department.
Works with Training Program Manager on content and distribution of the programs created in the department.
4.
Leads and conducts annual reviews of policies, procedures, and operations to determine impact and effectiveness of internal controls, as necessary.
Provides recommendations for enhancements and evaluates proposed program changes.
Serves as a F&B compliance officer for all enterprise mandatory trainings.
5.
Plans, staffs, organizes, directs, and controls all training for the department, to include safety & loss prevention, and chemical safety/hazards- pictograms.
Helps ensure policy and procedure compliance with continuous training for all Food & Beverage department team members.

Performs other duties as assigned to support the efficient operation of the department and assumes other responsibilities, duties, tasks, and assignments that contribute to the mitigation or response to any public health emergency.
Supervisory Responsibilities
Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws.
Responsibilities include interviewing, hiring and training employees; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
Makes hiring decisions and designs individual development plans with succession planning in mind for all key roles.
Education/Experience/Qualifications
Bachelor’s degree in hospitality management, Business Management, or related field required.
Master’s degree in hospitality management, Business Management, or related field preferred.
Minimum three (3) years food service industry experience is required.
Minimum three (3) years of supervisory experience is required.
Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements indicated above.
Intermediate proficiency in Microsoft Office required.
(Word, Excel, Access, and PowerPoint).
Must possess an understanding of food & beverage operations and its relation to the enterprise.
Must be able to deal effectively with customers in a courteous and professional manner commanding positive results.
Must be able to clearly communicate both verbally and in writing in English; bi-lingual preferred.
Must be self-motivated, confident, possess excellent leadership and mentoring skills.
Certificates/Licenses/Registrations
At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
A qualified candidate/employee must have a valid driver’s license with an acceptable driving record as determined by the company’s insurance carrier.
Must obtain and maintain a current Serv Safe Certification (Trainer Level).
Must obtain and maintain a current TIPS Trainer Certification.
